Earlier, on the Rocker Morning Show, I read a study that says the average person only knows how to cook five meals or less without a recipe.  I thought that was WAY low... until I thought about it long and hard.

My name is Stefani Bishop, and I have a confession... there is only ONE meal that I feel totally confident throwing together without looking at the recipe; my Crock Pot Beef Stroganoff, or "Fauxganoff," as it's been renamed.  Easy peasy:

1 lb beef stew cubes

1 can cream of mushroom soup

1 can cream of celery soup

1 envelope French Onion soup mix

Mix all ingredients together in a crock pot; cook on low for 8 hours, serve over egg noodles. Yields 8 servings. (If you find it's too salty, cut up a small potato and add it in the beginning; it will pull a lot of the salt out of the meal).

Fork drop.

Fine... whatever... I'm in the majority of having to run everything through Pinterest or Better Homes and Gardens.  I wasn't given the throw-something-together-just-by-glancing-in-the-fridge gene. I need exact measurements.  I need exactly the ingredients listed.  Don't get me wrong, I LOVE to cook, but cooking for one seems like such a pain in the ass. Sometimes I just settle for toast for dinner.

Who among you has been able to leave the crutch of the recipe behind?  How did you do it?  What tips might you have for someone struggling with cooking for one and having WAY too much in the way of leftovers?
